You’re invited to join my long journey of making balsamic vinegar at home!
I have been fascinated by how traditional Balsamic Vinegar is made in Modena, Italy, and I wanted to have just one small barrel of that sweet & tangy vinegar in my family-the same way some families in Modena do.
After years of dreaming, I finally decided to do it.
However, with all the circumstances I had to tackle, this Balsamic vinegar is different from the start, but I enjoyed every step of the long journey, and I hope you do too.

    sadly coconut oil is not a heart healthy oil, it has alot of good uses but topically is the best uses.,,,after much study i did not want to use coconut oil and fat as I had when i first became vegan.

    Hi. Great video and very informative. I see you don't use any sterilizer campden or any wine yeast, what's the secret, please share. I am also totally against use of chemicals in winemaking but fear the failure of the wine due to mold etc. Thanks

    Hi. It has been two weeks in 62F degree cellar. Daily turning and dry-patting. I have white mold on the sides but not tp and bottom. Top and bottom are still quite moist. Perhaps I was too airtight in my covering. Perhaps too much salt top/bottom (not really much salt on the sides). Ideas? Should I toss it and start over or be patient? The top/bottom edges have formed a brownish rind -- I am not sure if this is normal. Ideas???

    Ah yes, so "natural"* (* if you like processed oil). Why must Vegan's feel the need to appropriate terms for foods rather than create their own? Vegan oil spread would have done here... then again so would margarene. It is not butter. Trade descriptions need to stop this silliness. I tried it and it didn't even come close to the taste of butter. Let's stop misleading people.

    Your recipe is amazing! Video as well! I've been making some peanut spreadable cheese. I just do the first part, the curdling part. I love that I can do the curing process, I will try to do that. Can you tell me if the Probiotics MUST be 15 bi CFU? or Can it be higher? Somehow it is not easy to find 15 bi CFU, most common are 30+. Thanks a lot!

    You said no specific temperature requirements but here in the tropics coconut oil is always liquid at room temperature. Guess we'll have to get creative with the waxing.

    sprouting the flaxseeds takes at my home a bit longer than 4 days - I count on at least a week - I read about a study that explains that 10days sprouting flaxseeds have the most benefits - so that's what I do - I am only succesful sprouting the seeds on a clay pottery dish - I tried other methods, like on plastic pottery dish or a sprouting glass and that did not work - only the clay pottery dish is succesful - I did not dry them but maybe I should because it stays very sticky and I am affraid it might get molded if it's not dried - so your video has been very helpful
